Ingredients

- 1/2 - 3/4 cup liquid milk

- 1 cup butter or oil

- 2 1/2 cups all-purpose flour

- 2 tablespoons cornstarch

- 2 eggs (separated into yolks and whites)

- 1/4 teaspoon salt

- 1/4 teaspoon sugar (for egg whites)

- 2 teaspoons vanilla extract

- 3 teaspoons baking powder

- 3 tablespoons cocoa powder

- 2 tablespoons apricot jam (optional, for added flavor)


Instructions


1. Prepare the Egg Whites:

   - Separate the egg whites from the yolks and place them in two separate bowls.

   - In the bowl with the egg whites, add the salt and 1/4 teaspoon of sugar. Use an electric mixer to beat the egg whites until they form stiff peaks. Set aside.


2. Mix the Wet Ingredients:

   - In a large mixing bowl, combine the butter (or oil) and sugar. Mix well until creamy.

   - Add the apricot jam and milk, and continue mixing until fully incorporated.


3. Combine Dry Ingredients:

   - Gradually add the flour, cornstarch, and baking powder to the wet mixture. Mix until the batter is smooth and well combined.


4. Incorporate the Egg Yolks:

   - In the bowl with the egg yolks, add the vanilla extract and whisk until smooth. Pour this mixture into the batter and mix thoroughly.


5. Fold in the Egg Whites:

   - Gently fold the beaten egg whites into the batter using a spatula. Be careful not to overmix to maintain the airiness of the egg whites.


6. Create the Marble Effect:

   - Take a small portion of the batter (about 1/3) and place it in a separate bowl. Add the cocoa powder to this portion and mix until fully combined.

   - Now, you’ll have two batters: one vanilla and one chocolate.


7. Layer the Batter:

   - Grease a baking pan with butter and dust it with flour to prevent sticking.

   - Start by spooning alternating layers of the vanilla and chocolate batters into the pan. For example, add a layer of vanilla batter, then a layer of chocolate batter, and repeat until all the batter is used.

   - Use a knife or skewer to gently swirl the batters together to create the marble effect.


8. Bake the Cake:

   - Preheat your oven to 180°C (350°F)

   - Place the cake pan in the oven and bake for 40 minutes, or until a toothpick inserted into the center comes out clean.


9. Cool and Serve:

   - Once baked, remove the cake from the oven and let it cool in the pan for 10-15 minutes. Then, transfer it to a wire rack to cool completely.
